If you were stranded on a tropical island, chances are you could make a feast of fish, coconuts, and citrus—the key ingredients in the unofficial national dish of Tahiti, poisson cru. Similar to ceviche or Hawaiian poke, the iconic bowl consists of tuna marinated (or “cooked”) in lime juice, drenched in coconut milk, and sprinkled with carrots and cucumber. Poisson cru is the kind of dish that’s fortifying enough to eat after an active day in the water, yet light and refreshing enough to consume while wearing a swimsuit. In an hour-long cooking class, the Conrad’s own chef and kitchen team will guide you through all the steps for making—and eating—this most traditional Polynesian meal.
